I am going to put a Eclipse AVN 6600 in there. What adapters will I need?
I took this Eclipse out of another vehicle and retained most of those wiring harnesses (will they work)
I hope the steering wheel control interface still works...

The only adapter you should need will be an interface adapter. There's a listing of most of them in the FAQ (linked in my sig below) but the most popular are the Peripheral brand, the GMCO if you don't have Onstar, the GMAH24B and GMAHCM combo if you do have Onstar. The Metra GMOS-04 is also one that has been used a lot of late.
Your steering wheel module should still work, you'll just have to dig out the instructions from the manufacturer's site as to which wires you'll have to connect it to in the car.
I hope you have ALL of the Eclipse harnesses, otherwise you're gonna have trouble, cause those aren't easily replaced.
They're about $50 high on the interface, not bad on the others. Labor is subjective but I don't know that I'd bother cracking somebody's dash open for less than $200 myself, so it's hard to argue with. Time is money and labor is time. Swapping a head unit isn't all that difficult, you may want to consider DIY if you're cost-sensitive.
As far as the Eclipse harnesses go, they're Eclipse-specific so it's not an off-the-shelf item.
