Is it worth it to pull out all the Blows wiring when running new wire for audio?

No.
The wiring for the bose stereo is integrated with the factory wiring harnesses, you have to re-wire a bunch of your car.
BTW, you'll get a "U" code no communication when you swap out the head unit for an aftermarket unit.

"U" Code if not using a factory head unit. (aka Stock Radio).
The Corvettes use a data line that registers them with the BCM and you will no longer have this when you use an aftermarket unit.

I honestly have no idea what you guys are talking about with this "U" code stuff but I can tell you that you certainly can replace the factory radio with an aftermarket radio using an integration kit that will work flawlessly with the C5 and C6.
I would not try and remove any existing wiring. I would use a factory integration module and rewire for aftermarket amps and speakers.
