Normally i'd prefer to cut wires to a reasonable length, but data wires like AI-net, Optical, navigation, and similar are cables i'd prefer not to cut/splice.
Assuming the cable is about 3-5' too long, what do you suggest is the best way to reduce the exposed length?
Why can't you just roll the extra length around your hand a few times and zip tie the rolls together? We do that at work with all sorts of wires all the time. Unless you have something with an unusually high amount of current it shouldn't be a problem.

That was the original plan, but it just looked a little odd to me. Since i have the car torn apart for re-wiring, I thought now would be a good time to aaddress this issue.
Aside from the optical the rest of those wires are just standard copper feeds and cut & splice works just as well with those as they do any RCA or speaker cable, there's just a lot more of it to do. But honestly as stated above, I'd spool it up and hide it.
Unfortionatly that was the problem. With the car being a daily driver, installation of additional "goodies" meant wires were run on top of eachother on various routes. It was a very ugly mess. Removal of old components didnt' nessicarily mean the removal of the supporting wiring. Part of the reason behind the re-wire was simply not being able to put the console back on completely because of the wire mess.
Back on the data cable subject. I've decided to tie all the associated cables together and run them back and forth down the side of the tunnel. This keeps them low profile and hidden.
