When doing the wiring from the head unit harness to the cars harness, what or how do you do the connections? Do you use some type of connector or solder the wires? I thought about using some sort of connectors that plug into each other so if & when i would change head units i could just unplug the wires. Is this a good idea?

Those are butt connectors.
I used crimped connectors
For car stereo connections I usually use butt splices, but I use them like wire nuts. I'll twist the wires together (like I was going to use a wire nut) then crimp on one end of a butt splice.
Most of the plug-in type connectors will use crimps on one end to attach the wires, which creates three possible places for the signal to fail, so be sure to crimp the snot out of the wire end of the fittings and also make sure the connection parts have a snug fit.
