I had Fry's electronic around the corner from my house tell me they could do it for 20 a side, but figured I'd give a forum vendor my business first or do it myself.

-MDF, low grade, if sealed up well, usually ok but prone to moisture damage eventually and heavy, may as well make them yourself, dirt cheap that way.
-Phenolic, super high grade, dense, none resonate, still pretty heavy but I would take it over MDF anyday!
-Alumalite, honeycomb, super stiff, super low in weight at 4.5 oz each including covered in Ensolite which looks great under the grills and has superb acoustical properties. $39 a pair.
If you are like I am and consider these a super car then you want to only add weight where absolutely required and get a set of Alumalite baffles. If you are not concerned with added weight, then get the Phenolic ones.
