I'm installing a 250 sub amp and a 360 component amp. Will it be necessary to do the big 3 for these? Also, is the metal underneath the waterfall a good place to ground the amps? I currently just have the 250 with a sub in, but I am replacing the rest of the speakers over the Christmas holiday. The lights currently dim when the sub hits, but I'm thinking that may just be due to a weak ground (under one of the passenger side seat bolts). That's why I was wondering if the big 3 would be necessary and if the waterfall would be a better grounding point. I have seen people say to bolt it to the rear bumper, but I'm not sure I want to go through making a nice hole and routing the wires back there if the other would work just as well.
I'm also going to be building an amp rack to go under the convertible top and was wondering if it is better to put the crossovers just in the rack or to have them in the door. I have never used component speakers before and didn't know if having the crossover in a certain spot is more beneficial. I just know having it in the door would be fewer wires running from the back to the door.

They are JL audio amps, so that is RMS watts.

The Big-3 will make your electricals more efficient AND establish a more reliable ground <CLICK HERE> However this will likely not eliminate the dimming during big-bass hits, but a super-amp alternator would (250+ amps).
The waterfall metal should be okay, but most prefer direct to frame inside the passenger door sill.
Crossovers should not be placed in your door, moisture, dirt and dust can possibly foul them, not to mention vibration and jarring from closing the door. In the rack should be fine, or under the dash.
