It's not a matter of it not running properly - 8ohm speakers run fine on automotive amps. It's a matter of efficiency. Car amps are typically designed to run a 4ohm load. If you run an 8 ohm speaker, you effectively reduce the power output of the amp.
That being said, running a single 8ohm speaker on a 2channel car amp which is bridged into a single mono channel, is a perfectly acceptable configuration, and allows the amp to run "properly", with no loss in power from stereo 4 ohm configuration.
Most stereo car amps bridged will run a 4 ohm load, but few will run 2ohms.
