I have a C6Z with Bose and in process of replacing the Head Unit with a Sony AX210. Been looking for one (200 or 210) for a while, excited to install. I am running into a slight hiccup. On the Sony harness, there is no orange/white wire (illumination) to connect to the respective orange/white wire on the RP5-GM11 harness. Is there anyway I can buy a pin to pin it in? I believe it should exist right next to the red wire in the Sony harness.

Who did you buy the unit from ? If you bought it from Crutchfield I suggest you contact them and tell them you got a harness missing one of the leads, they have good customer service and should take care of you. Sure, you could probably re-pin it assuming you know what type of pins used and are able to find them, and you're positive you have the right position on the connector, guessing is not a good idea, because if you guess incorrectly, you could potentially fry the whole unit as the illumination circuit runs at 12+ when energized.
Or you could just buy a replacement harness such as this one, looking at the picture of it, you might be on the right track as far as pin location for the illumination.

I think that's going to be the plan honestly, pick up a new harness and redo it or try to de-pin the single wire I need. Either option will be time consuming lol. It's impossible finding information out related to pins that's are made of these types of connectors.
