Yes, you can do that.

Actually, you can do either. If you are buying one sub then you may as well get a DVC sub. You can run it off either a mono or 2-channel amp. Just make sure if you get a 2-channel amp that you run at proper impedance. For example, most 2-channel amps can't handle 2-Ohm mono but they can handle 2-Ohm stereo and 4-Ohm mono, since 4-Ohm mono and 2-Ohm stereo are the same power output, wire the sub to run at 4-Ohm mono. I hope you followed that.

In a word....No. You can find good deals on better amps if you shop around.
You will find plenty of suggestions on affordable components here. :seeya
[EDIT] Is this a stock C5 stereo system or an aftermarket system? It makes a difference.
You could get a 5-channel amp. It has four channels with class A/B amps (full audio range) and one channel with a class D subwoofer amplifier. The sub channel has two inputs that it mixes together, so you still get both stereo channels on the sub.
The upside of this is that it'll be cheaper than two separate amps. The downside is you have to spend it all in one chunk.
Oh, yeah, Pyle sucks. Their amps are WAY overrated. The specs they give are total bullpoopie.
I have 2 amps right now that would be perfect for your application. I have a 2 channel that will bridge to 400w for a sub and a 4 channel that puts out 37.5w into each channel. They are older Lanzar Optidrive units and are great sound quality amps. They look perfect and have always been taken very good care of. Not to mention, they are both the exact same size so they will look very nice in an install. They are just sittng in my bedroom collecting dust right now. I would love to find a good home for them.
