I'm nearing the end of my restoration on my 60 and I can't help wondering how they built 50 or more cars on some days. Did everything fit better back then? I had to grind and fit my cove moldings that came out of GM packages and so on. You've all been there.
How long did it take from start to end for a car and how many plant employees?

they got alot of work done because they had alot of people!. Plus when we do one task the first time it probably take five times longer that it would have at the factory, the next time you do the same task it is probably only twice as long than at the factory. After you have assembled you 10th dashboard(or whatever) you would be getting pretty close to the efficient flow of a factory. I think the vette factory had between 300 and 1000 assembly line workers.
I worked at fisher body in Flint for a while back in 66 and the first week on the job I was always behind in a couple of weeks I could keep up but If a screw went in wrong or a piece didn't fit you didn't worry about it or you used a BFH to make it fit. I even used a 2x4 with carpet on it to spring doors, trunks, and hoods back into place. quallity-quallity-quallity

In the C1 days, St. Louis only ran one shift, with about 400 people; took about four shifts from the beginning of the Body Shop to drive-off at the end of the Final Line. They built about seven per hour, and no, things didn't fit very well; they learned how to compensate to get things to fit (or what passed for acceptable fit in those days, which wouldn't pass muster with today's standards).
I guess thats the answer. That caculates to over 450 man hours per car using all new parts. Consider how many sub-assemblies were completed outside the plant and add that to the 450+ hours. If you subtract the time we need to spend on buffing and repairing parts, that they didn't do, we probably put them together faster then they did.
