Had Hagerty but switched to Grundy because they would insure my 87 Vert and Hagerty would not. Had a minor claim (rear quarter, $500) on my 64 coupe. Was extremely pleased with the service. No hassle, took it to the shop of my choice, got a quote and had a check before it was out of the shop.
Mine's a C4, but I have an agreed value policy for $24k with Atlantic Mutual. No limitations or useage restrictions of any kind. It's up to me what I do with my car. You might want to check them out when you're shopping around.

BUT I use American Collectors...(actual company is American Bankers of Florida) to Insure my 64 72 76 79 AND 98 Vettes...
Under $1000 TOTAL per year.... But honestly that is not the point...
Wrecked my 79 5-6 years ago...ABSOLUTELY no hassle getting it fixed (to my satisfaction) at the place I wanted to take it (Shop did plenty of Corvettes)...
ONLY Problem was waiting 3-4 days for them to get an Adjuster out to look at the car...They use Adjusters who are CAR GUY's. Mine happened to be into Mopars..but he understood my concerns ESPECIALLY using the correct parts to repair my car...
