Sounds like a fuel filter is packing up. The sock in the tank, on top the front of the engine or in the carb in the inlet. Depends on which engine you have. It could also be sucking air from one of the two rubber hoses in the line. One right after the tank and the other before the fuel pump. I have no clue what the noise may be.
I'll guess a fuel problem. When I drove my '65 home, 350 miles, after purchase I kept it to 55-60 for the first 200-250 miles of interstate listening and sensing for any problems. When I brought it up to 65-70 it started to break up and wanted to die out until I slowed to 50 or so. Did this several times until I figured I'd better back off as several times I thought it would die on the road.
I suspected ignition, point float, all checked out well until I removed the fuel filter and tried to blow through it. GM sells a modern version of the GF-90. It will function fine, but the diameter is too large for the bracket. It'll keep you going until you plunk down $45.00 for a correct replacement. As suggested problem could be several issues, just my .02 experience.
Long shot but --- Fuel cap not vented? Nest time it happens undo the fuel cap and see if you hear it break vacuum. If it does and then see if it starts right away.

How long ago did the gas stations in your area switch from MTBE to ethanol in their gasoline? If you've only been using ethanol for a little while, you may discover that more sludge from your gas system will accumulate in your new filter.
