My voltage meter bounces wildly when I hit the brakes, turn on the turn signal, etc. I don't remember it doing this when I first got the car. Since then, I have replaced the voltage regulator for a separate reason. Is there something else I should be checking?

Check the alternator output. Should be ~14V at 2000RPM.
could also be a ground problem somewhere. Rule this out by jumping a wire from the neg post on the alt to the base of the volt reg, if it then gets steady, mkae it a permanent connection until you have rechecked all the grounds.
I agree. It maybe a ground problem. My gauge was bouncing everytime I hit a bump. I took everything apart and cleaned the connections and it solved the problem.
There are a number of capacitors added thru-out the wiring in a mid year vette. The brake switch has one the ignition switch has one and also the radio and instruments.
Check them all for grounding. There is also a black wire attached to a ground lug at the top of the instrument cluster. it is visible when you remove all the screws.
