The min (1.215") should be stamped into them? Are they warped or chewed up, if not I wouldn't do anything with them except maybe scuff them up with some sandpaper to clean off any glaze.

I'd leave them alone - "turning rotors" on a Corvette opens a Pandora's box of potential brake problems most brake shops can't deal with. Using stock OEM-type organic pads, Corvette rotors are good for 100,000 miles with no problem at all.
Brake shops DO NOT understand fixed-caliper brake systems, the need for near-zero lateral runout, or the complications that result from having excessive runout; they work all day long with floating-caliper systems.
Kurt I finally replaced the original rotors on my '67 two years ago because I didn't like how they looked. I figured it would be a good time to replace them with made in USA Raybestos Rotors while I could still get the Rotors that were made in the USA since most Rotors come from China anymore. They were not very expensive. If I were you that would be the way I would go if I had to do it all over again.
