I have been tuning the Ram Jet 350 engine in my wife's '62, mainly trying to improve the fuel mileage. Do any of the more common dynos (Mustang, Dynojet) have the ability to place and hold a load on the engine? I would like to be able to log data at a certain RPM and MAP setting for a period of about 10 seconds, then increase the load while maintaining the same RPM, log data for 10 secs, etc, etc. Never had a car on a dyno, so I don't know what their capabilities are.

Have you thought about purchasing an LM-1? I have a friend who is a Pontiac nut and he uses an LM-1 to tune his 550 h.p. GTO with good results. I don't know if this helps or not, I just thought I would offer it up.
Yes, I have an LM-1 connected into my exhaust and the aux. output wired into the Ram Jet controller (for data logging purposes only).
I found a place not too far from me that has a Mustang dyno and they say they can do what I am looking for.
