So I am painting the 1965 corvette. I started stripping the car dec 1 2010. As of last night I painted the base clear coat. 2 months of work and still another month or so ahead.
Looking good but i would have painted the door openings and then hang on the doors before painting.
I have seen several cars that have had the car painted and you can see the difference on the doors because they where laying flat and not standing up(like when mounted on the car)This is more easy to see on a coupe. And espially if you have the car at a paint shop that is not serious. They might paint the car and then paint the doors and other parts the next day or so.This is just how i would have done it if it was my car.
Your car looks great

I would say I've seen some reputable shops paint them both like the OP and by shooting the jambs all around and hanging everything back on as you said. I've also seen people hang the doors on a rig upright (but off the car) oriented as they would be normally which is probably the ultimate best solution.
I believe most C2's were color sanded and buffed from the beltline up which should get rid of any inconsistencies (I guess there's always an exception)
Looks nice rovers2000, How many times did you end up blocking it out? And how did you deal with the old paint? I would be interested in your striping process...
