On the 1960 FI resto, we have let the car run and temp. is running around 185 which is what t-stat we have in it.
When we turn the car off, and just turn the key back on, the temp. guage goes up to around 210.
This is weird........yes??

No because after you shut it down the temperature will keep rising with nothing ( fan etc) to bring it down. That is quite normal.

Perfectly normal!! Residual heat will build up when you shut it down, but once you restart, should go right back down. Why not run the correct 180* thermostat?? Pilot Dan

You are probably used to a modern car where the electronic fan will continue to run long after the engine is shut down until sensors determine things have cooled down.
The behavior you are seeing is perfectly normal for cars from the '60s...
