What we are saying is it depends on the thermostat installed and how efficient your cooling system is. Use the IR gun and calibrate your gauge to see what you are ACTUALLY running at.
A 180 therm is where it STARTS to open..so the car will run a lil hotter that that. Hope for 190-200.

Here's one more and many times over looked crucial item when developing an efficient cooling system.............a known good radiator cap. If your cap won't pressurize to spec....say 15lbs, your system will never cool as efficiently as it could. Whether you have an original cap, after market or repro cap be sure it meets spec. This means pressure check your cap of choice.
