I have had stuff done over the years at Valley Head up in the valley and was looking at Hank the Crank (Orange County based) for machine work on a raw 4340 Crank forging that I have to special turn out for my Bowtie Aluminum Block build.
What do you need machined or are you just looking for someone to assemble an engine???? What purpose is the engine being built???? I think guys that assemble engines tend to specialize in what they select for the venue of competition.
I knew one very unhappy customer of Team C's! I actually have never shopped there, but a friend that passed had a 1966 Chevelle and the rebuilt 383 failed mechanically. That was a number of years ago, and I don't remember the details on it and his Father isn't around (moved away).
The Vintage racing guys, seem to have strong engines that hold together. Thus that is where I am thinking about referring you!

If you are looking to have your stock heads modified, Flow Technology in Garden Grove is the place. The same guy has been porting SBC heads for like a bazillion years and did the heads on my '64 ~25 years ago.
