What is everyone's option on the best reproduction date coded mirror company? By which method from factory was the date applied?

For C2 cars, buy the dated one from Long Island Corvette Supply. The will provide your date (or close to it).
If you need a complete mirror (or mirror restoration) use Joyce Borrell, the mirror lady.

I have a slightly different question: for an "OK" complete mirror assembly that looks somewhat original, who makes an inexpensive one?

I would call Paragon as Nowhere Man stated above. They have good quality reproductions at reasonable prices.
