Default alianment

I just completed replacing all the front end parts(ball joints, tie rod ends, bushings,etc. and all of the rear parts(spring, etc).
I need to take it to a front end shop on Monday. Is there any way to make close adjustments in order to drive it there? I have heard of using a level to center the front and rear wheels up and down. Is there something for toe in to make sure the tires are running straight in the front?
Second question while I am on a roll.
The engine is a 350. I bought 2 water temp. sender units. Mounted one in the intake manifold the other in the head water jacket. The stock gauge
read 175 on the intake and 220 on the head. I checked both sender units to make sure they were accurate. They were. Is there that much difference in location? The tstat is a 180. Which location should I use?

for the front toe in I used 2-2x4x8 as a straight edge and put them on the insides of the tires in the middle of the boards.Then measured the front edge of the board and then measured the rear end of the board and adjusted in until the measurement were equal.On the camber I used a level both front and rear.Bring all your extra shimms and give them to the alainment guy.

Raise car, spin the front tires, and scribe a line on the diameter of each tire in center of thread. Then use a good tape measure to set the distance measured across the front and across back of each tire's scribed line.

Thanks for the info.
Here is how my day went Saturday. I called a tire store that does alignments. I asked them if they could do an alignment on a 66. They said yes.I asked them if it was computerized. They said yes. I told them I had the settings needed to be set for if they could do it. They said yes. I asked them if they had the shims. They said yes.
I get there the alignment person said he could not set the alignment machine to my specs. Then he went to the machine and came back and said they could. I leave and get a call 11/2 hours later saying they could not align the car because they don't have the shims for the rear. They recommend taking it to one of their other stores. Fat chance on that.
I believe they did not want to do it but wasted my time.
Next trip I will take some shims and find an old timer shop. :mad
