61 hood nut plate
I removed the hood on my 61 to close up all the air gaps around the radiator.
I am almost ready to re-install the hood but how do you hold the two nut plates for the hindges from moving to start the bolts?

I don't really think the nut plates in my hood had very much movement. I usually had my wife hold one side and me the other and just start one bolt on my side and then switch sides, then put the other two bolts in, then bolt on the prop so I could the adjust the fit. You might try using a small punch or drift pin to help align the nut plate.

If I remember correctly, cut the head off a bolt or get some all thread and cut a piece off, thread it into the nut plate, put the hinge over it, get a regular bolt, using the stud to move the plate around, locate the bolt hole, put the bolt in and tighten, take out stud and replace with bolt. Leave bolts loose so that you can locate the hood to fit when closed.

I don't remember having that much play in mine either. You might try to hold the Nutplate in place with a little dum-dum or similar.

Your nut plate retainers are bad or rusted away.
I take my hood off, with the hinges attached to the hood, as the only way i can get the hinges onto the hood, is with the hood upside down on something, like a table or the ground.
I would use fine scribe to trace the hinge outline onto your core support, remove the hinges, a nd put the hinges on the upside down hood.
You DID mark the hinge to hood location with masking tape or a scribe, didn't you?

Yes I did mark the bolts/hinge before I unbolted them. I like your idea of putting the hinge on the hood and then installing it.
