Default Temp/ammeter gauges

Recently had my '65 327 rebuilt at area rod shop. Installed DeWitt radiator with fan, 160 amp alternator with internal voltage regulator, 180 thermostat and new wiring harness. First issue: temp gauge reads 180-190 for the first 10 miles or so, then slowly starts going higher the further I drive (used to read 180-190 if I drove 10 miles or 100). Don't want to find out how high it will go. This is sending unit #3. Next issue: since installing electric fan, ammeter gauge reads +10 when car is idling but goes to +40 and stays there while driving. Voltage readings from alternator and battery show no over charging.

Get an I/R Harbor Freight temp gun and shoot the thermostat housing to determine temp gauge accuracy. Hook you electric fan to the horn relay power buss which is where the voltage regulator 'senses' the car's electrical needs to regulate alternator output and send gauge readings...
