The VIN indicates a production date of approx. Jan 1967. I can confirm this once I get home to check it against my NCRS manual for the '67
The VIN will not tell you anything about which options were factory installed in the car. This information was included on a paper "Build Sheet" glued to the top of the car's gas tank. However, most of these build sheets long ago crumbled away, or were removed during a restoration or gas tank repair. Chevrolet long ago lost the original records, so you have little chance of getting a copy of the Build Sheet.
You can get a "Body Shipper" report from NCRS (about $40). This will tell you the exact production date of the car, and the name and location of the original dealer that sold the car.
The BODY plate on the "Z" bar beneath the glove box will tell you the original exterior paint color, and the interior upholstery type (leather or vinyl) and color of the interior.
If the car's body was built in St. Louis, there is an ECL code on the Body Plate that gives some additional info.

The VIN number gives no information (zero) about color, options, engine it. It simply tells you coupe or convertible and production number. Yours is obviously a coupe and is car #10978. You can estimate the car's birthday from the VIN number, yours is approximately February 15, 1967. If you post a photo of the Trim Tag then more information can be identified including body sequence number, plant designation, paint color, interior color, body date and ECL code. The ECL code can be further evaluated to give some idea of options or what options it could not have, but none of this tells you what engine, what horsepower etc. There are many many clues that will help sort this out, just search on this forum there is a huge volume of information. Obviously if your car still has the tank sticker on top of the gas tank (you can look around the filler neck rubber gasket to see if it is still there) then you may find all of the information you seek. As was mentioned the VIN # only info are the approximate DOB and that your car is a coupe (37). However your car is a 67 and on the gas tank is a sticker that replicates the window sticker when your car was delivered.
