Post some photos of the carb and any numbering stamps on it. If it's a '63 Corvette carb then it's probably worth getting rebuilt; you're going to spend 2x that for a new replacement.
If it is truly the original carb, spending the $300 for a proper rebuild to factory specs is the correct decision. Chump change in the grand scheme of things.
A 3461s Carter AFB is a high value carb and correct for both the 300 and 340 hp 63’s. If yours does not have that number and has a stock intake, a AFB 3721 is a lessor expensive replacement almost equal performance. If you do have a 3461s, have it refurbished. It will be worth it.
Don't know for sure, but I don't think your 63 air cleaner will fit on a new Holley or Edlebrock. A $300 rebuild will save you a couple of hundred there.

Give us some detail on why you think the carb needs rebuilding. How is it misbehaving? The AFB is pretty reliable and trouble proof. The biggest problem is the choke system, mainly the choke vacuum break piston getting dirty and sticky, so choke operation is impaired. They are pretty simple to rebuild, and the procedure is in your 1963 Corvette Shop Manual. When they get over 100K miles the throttle shaft bores are usually worn enough that the idle speed is inconsistent. At that point you need a pro with plenty of experience who can rebush the throttle shaft bores.
For those of you who don't know the Holley bolt pattern is different that the AFB, and the air horn is different diameter, so no Holley is a bolt on to an engine originally equipped with an AFB nor is an Edelbrock "AFB" combatible due to a different air horn diameter. I'm not sure about the bolt pattern.
In almost all cases one is better off doing a full restoration of an AFB rather than coming up with some Mickey Mouse alterantive.
