I know when you turn off the engine, the temp gauge stays where it is. After the engine cools down and the ignition is turned on, the temp gage

When I park the car with a hot engine (180*) the needle reads 180 even after I turn the engine off. When I go to start the car the next day with a cold engine, the temp gauge needle should return to cold but doesn't. It's still shows 180* with a cold engine. I can get it to go to a cold indication if I physically remove the spade connector at the temperature sender.

I guess you’re just not gonna tell me if anything happens after you start it or just when “you go to start it”
After I start it, the temperature needle does not move from the 180* position. So basically, once it reaches 180, the needle remains there. The only way I can watch the temp rise is to disconnect the wire from the sending unit. Then the needle goes to cold. I re attach the wire from the temp sending unit and I can watch the temp rise to 180.
So no matter what I do, the temp gauge remains at 180 regardless if the engine is off or running.
