I'm taking my 65 327/365 in for a major engine and trans overhaul. I want to go with a roller cam and lifters. Anyone know of a cam I can use that will maintain my current horsepower and still have the lumpy idle?

On my big block, I also went with a roller valvetrain. Make 100% sure that you have the clearance for your polylocks on the roller rockers. I did not understand this and the engine builder had to make 3/8" spacers from billet to add the clearance. If I had known this, I would have done something else. I can't make a cam recommendation specifically, but if it isn't stock and you have stock timing and carburetor, you will have to make adjustments there. I would get something with lope.
I would call Bullet Cams, Howards and Chris Straub and compare notes for a custom grind.

Yes you can certainly go with a solid retro roller cam, the lifters are quite a bit more money, Ismy Red Zones hold up pretty well on the street. That's another great source to.talk too that I should have included, Ron Iskedarian at Isky cams.
A solid cam will insure your 7K revs.
The LT1 cam is a better street cam than the 30-30 and it sounds the same. Here are the specs, now a roller cam.doesnt need all the duration that a flat tappet has and with better results
LT-1 cam as designed by Chevrolet uses the L-72 lobe (on a smaller base circle) on the inlet side indexed at 110 deg. ATC, and the exhaust lobe is from the 30-30 cam indexed at 122 deg. BTC, which yields a LSA of 116 deg.
.050 lifter rise duration (including clearance ramps) is I/E 242/254 degrees... net of the clearance ramps is 231/239. Gross lobe lift is .306/.323" and clearance ramp heights are the first .012/.017" of gross lobe lift.
