Mystery solved: I was NOT getting 7 mpg... I was able to drive a bit this weekend and fill her up - looks like the bladder has lost quite a bit of give (the car's, not mine) - only able to squeeze about 10-12 gallons in there and I'm actually getting about 12 mpg. Thanks to all that replied.
