I'm thinking about installing a fuel cutoff valve (among other things) as a theft deterrent.
What do some of you use?
Is this a hardware/ auto parts item? or do I need to order something special?

I think Smith & Wesson in Springfield MA makes some of the best deterrents, I like their hand held .357 mag model. Stops thiefs with a small piece of lead to the head.
If you do a search there have been several discussions about theft deterrents. One of these had someone detail how they installed there isolation valve near the tank. Usually for something like this I would look for a marine application they are generally good quality products and are made to stand up to the elements.

It works but against the law-something about hunting over a baited field or something.
