I am not sure what the late c3 were like. The early c3 had the manifolds oversprayed orange that would burn off. So it should not be painted at all. But if it was not to be original and look nice, I would go grey. It has been a while but I used something I got from Mid America. It was like a paste that I put on with my fingers. When you start up the car it bakes on.

The restoration manual says all 1981-82 exhaust manifolds are tubular stainless steel, and they don't mention any color, so my guess is they were not painted at all. Probably because its difficult to have good adhesion on stainless and not required.
