The guy that had my '79 before me painted it. He also painted all of the moldings and trim around so I can't if certain pieces should be originally chrome or black in color. My car is Brown and I would like to eventually return those trim pieces to their original color to have a little contrast...

your best solution is to go onto the NCRS website ( NCRS.org) and order up the '79 Technical Information Manual & Judging Guide (TIM&JG).
This book will go over almost every part on the car and describe it, give the proper color and finish (such as gloss, semi-gloss, etc), besides casting numbers, date codes, etc.
It's one of the "bibles" you should have on your year car if you want ANYTHING to be as a "correct stock" condition.

but I'm thinking of removing the paint from mine since a little dash of chrome would look good. I've already removed the paint from the wheels and polished them. I believe I remember reading here on the Forum that the trim is actually stainless.
All the winshield and rear moldings should be black. The rocker moulding is also black except for the thin strip along hte top of the moulding, which is left unpainted. I just painted mine with Krylon Semi Flat Black spray paint and they came out very nice. It may not be to NCRS specs as far as the paint being exactly correct, but I"m not that ****.
This past Spring, I repainted the t-top trim, windshield and rear moldings with Krylon semi-flat black. The trim should be black on a 1979. I had some paint chips which the chrome was showing through. I sanded smooth with 800 grit paper, taped, and then sprayed on the Krylon. Turned out great. Good luck!
