I had Discount Tire put new tires on my 78 Silver Ann. 225/70/r15 in front and 275/60/r15 in rear. Rears don't rub while driving, but when it was up on the hoist (with shock fully expanded) I noticed the rear tire was rubbing on the rear suspension (control arm I think, but not sure as I am learning about the vette!) It only touches on one side. Not sure if that's normal (alignment or something may be wrong??)
It's not rubbing while I'm driving at all. Have I went with the wrong size tires? Should I not worry about it? It looks fantastic. What would you guys do?

275s are pretty wide for the back, they make offset trailing arms for that, or maybe spacers would get you a little more clearance. I wouldn't drive my car with tires rubbing on metal parts...
Get some 1" spacers from "completevalue" on Ebay. You can move the wheel 1" outwards and the tire still doesn't rub or stick out too far past the fender.
I used to run 275-60s on the rear axle, it was a very very tight fit without the spacer. Keep in mind how much that huge sidewall flexes, under hard cornering it will rub and if you don't notice it may eventually tear the sidewall.

Yes, these fit. I bought from that seller before and had no problems.
The adapters come with M12 metric studs. I bought new lug nuts at AutoZone ($1 a piece). If you want to re-use your original lug nuts you'll have to buy the 7/16" studs (also $1 a piece).
To make that entire assembly bulletproof I upgraded to M12 ARP studs all the way (hub to adapter and adapter to rim). The 7/16" are marginal at best, 1/2" would be great but there are not too many lug nuts available.....
Make sure that the studs in the hub don't stick out past the mounting surface, I ground a few thousands off, see photo (photo is old, it still shows the old threads):
