So i'm trying to get the compressor out of my way on my '69 so I can replace the exhaust manifolds with some new headers... i thought about just leaving it hooked up and position it out of the way somehow, but that's not working for me...

Just loosen the fitting on the back of the compressor and the freon will start come out. Loosen the fitting slowly. Make sure you can get your hands on freon to replace what you will loose. I would replace the seal, add oil and freon
Not really the best idea. Once you open the system, you have to have it pumped dry and refilled. Big expense. If you have R-12, it is very expensive to replace and some places won't replace it.
Plus I believe in some areas it is illegal to exhaust freon to the atmosphere.
Loosen a few more brackets, have a very good fender cover, and just lift the compressor back up on the fender.
I did say, make sure you can get freon (R12) will run around $100.00 to refill. 134 Freon will not work unless you do a conversion on the system. If you don't want to go through that, move the compressor out of the way.
