There is nothing in the VIN to tell engine. Did the engine come with the car? If so, it should have the last 6 digits of the VIN stamped on it. There may be differences in the frame or some other component unique to a big block car. I'm no BB expert, but I'm sure someone else will chime in. Looks like a fun project, good luck.

there are several big block check points
larger springs - check front ride height
larger half shafts
u-joints on diff use caps instead of straps
Tachometer redline is higher

You can't without some sort of original documentation with the car. Any and all of the usual big block tip offs could have been purchased over the counter from any Chevy parts dealer or removed from a donor car and installed on your '68.
If the tranny is original, it's stamped with a VIN derivative and should match your VIN.
If the documentation trail is cold, why worry about the original engine? Build the car the way you want it, cruise, and enjoy.
