Get some manuals ie: Haynes Repair Manual - Canadian Tire
Not the most authoritative publication but will answer all basic questions.
All sort of manuals available through most forum vendors.
Welcome to the forum.
Fuel depends on your engine, normal 350 would use regular fuel. If high compression, adjust fuel. Engine operation will tell you if not happy will fuel grade.

Welcome. If it is the original engine it should take 5 quarts with a filter change. I use 10W30 in mine. I'm thinking about switching to Mobil 1 synthetic but it had 100,000 miles on it and I don't want it to start leaking. Tranny fluid should be Dextron. Whatever the latest type of Dextron being sold now should work just fine. The Diff takes 80W90 with a GL5 rating. You may need a GM additive for the Posi-traction though. You will need to check the manual for that. The steering should be regular power steering fluid. As for gas, if it's the original motor, regular 87 octane should be fine. I would try that and if it knocks and pings, try bumping up to mid grade.
Good luck and enjoy the car!!
