That was my plan when I bought my '77, so I bought a new crate motor, installed fuel injection, put an overdrive transmission in, and now this winter I am making my own fiberglass dash with new autometer gauges.
Make sure you document that project! I have thought about doing that to mine and would liek to see how yours turns out.

I used to live on the top story of this building. I took this pic right after the hurricane:

I can't find any good pics of the top floor, but had a pool table, fooseball table, Coke machine, full kitchen and bath, lots of beer signs.......it was a bachelor pad. Walk downstairs and my car is on the lift waiiting to be worked on. My parents built it about 300 ft. from their house and I moved out a few months ago. Not sure why I'd love to build a similar setup one day where the whole bottom floor is the garage. I agree....an old firehouse would be AWSOME!!
