hey i have a 78 vette and i need the carpet. im trying to look around and see what types i like and i think i found it. anyone know what this is called or where i can buy it from

That looks to be "cutpile" type carpet. You can buy it from any of the vendors. I've attached a link from Wilcox that shows sample pictures available for a 78.

Here is a picture of the Carpet Samples for the 1978 cars.
These are factory colors.
The carpet in your picture looks like a graphite color. If you want graphite it's available. I can't tell if it's graphite or Black.
You might want to email sales tomorrow or call sales at 800-588-3883. I'm sure we can get you the carpet you need in the correct color.
On 1978 the only issue if you want Graphite may be the pinch welt on the door jamb. Sales may need to check for you and see if its available in Graphite (If this is the color you want). If not, you may have to get the graphite color with a black welt.

is there anyway i would be able to get that so where the shifter and the whole main console area isnt cut out. b/c im looking to get rid of my console and have carpet go over where the console would be and have a shifter boot come up. if i cant get it in a "whole" 1 piece thing, how would i be able to fill in the missing carpet. hope u can understand what im trying to say, i dont really know how to explain it

There is no way to purchase the carpet as one section in the front. You can purchase yardage of carpet in the same color, but I think it might look bad if you did something like this.
