When putting my new motor back together should I use stainless steel or hardened bolts? This would be for flex plate, intake, exhaust, fuel pump and all the parts that go on a crate motor.TIA.
ARP Fasteners for just about everything. And part that is subject to shear loading should use at least a grade 5, and in some cases grade 8.
The flywheel/flexplate is not a place for a "hardware" grade bolt, lest your Vette may become 2 pieces.
The intake/fuel pum/water pump use whatever you like. Stock exhaust manifolds the same.
I did a little research on stainless when was rebuilding my suspension. I had planned on using a lot of stainless hardware until I learned they are just below grade 5 in strength. Nice not to worry about corrosion, but I'd just be worrying about bolts shearing instead. I'd rather take my chances with a little rust

I used ARP bolt's in all the stress area's on my engine rebuild. I used stainless in the dress up area's.
