The hardest part of doing this is taking out the dash pad (if you do it this way).
On your 79 you can replace them by leaving the dash pad in and working with the center dash cluster, radio, a/c ducts, glove box, and the speedo tach housing out but it makes it a harder job.
Are you paying someone to do this job or are you doing it yourself too?
We are putting almost all the wiring harness parts in to the forum special section and they are being priced lower than you will find them anywhere if you need them. I don't have them moved over for the 79 yet, but I can have this done tomorrow evening and post you a link for them.
I am looking to pay some one to do it. I already have the interior gutted and I am doing a custom rebuild as well. I plan on making a fibergblass console and gauge bezel. I also purchased an aftermarket wiring kit from Centech. I jsut wanted to get an idea of how much I could expect to pay for labor for someone to do the work.
I found a local guy who said he would rewire the car for $500. He is a electrican and has done a lot of rewireing jobs. He is doing it on the side and said it may take him 3 or 4 weeks. Does that sound like a good price for the work?

$500 for a job thats going to take 3-4 weeks doesnt sound right. I'm sure its not 3-4 striaght but more than likely nights and weekend time.
What he going to wire? Just the dash or the engine compartment and front and rear harnesses.
For what the harnesses cost you'd be better off using Lectric Limited harness all around and adapting hte dash harness as needed. The $500 your thinking of paying him along with what you'll get for returning the one you already bought should cover a full wiring set from Wilcox (or any of the other vendors)
He is just doing the work in the evening and in his spare time. I am not in a hurry to get it back but I know that this guy will do it right. He is removing all the old wiring and installing all of the new.
Well, just in case I added the 1969 and the 1979 higher end wire harness's to the forum special section. I think we now have them for 1969-1973 and 79 with the rest to be added as soon as possible.
