I think it will work ok but just won't seal to it's full potential. The water in the latex activates some kind of gel in the tape and makes it seal along the edges. I've used it around the house and it does do a nice job with latex.
You will be fine if you use pretty well any real 3M product.

The blue is basically a "homeowner grade" with less adhesion and greater sunlight protection on the adhesive. I wouldn't use it.
I used it to outline a red border when I epoxy coated my garage floor. It worked very well and came up quite easily, but the Wolverine epoxy coating I used is incredibly thick compared to paint.

I can attest that stuff works great... with latex paint.
