How much of a pain is it to take the body off the frame from one of these ?

I've never done it myself, but I've looked into it, and it's a pretty big project.

This website will give you a pretty good idea. I just got the body back on mine, and i'm no expert!! It was a lot of work, but well worth it. Check http://www.corvette-restoration.com. I still have the plans for the body dolly-pm me and I can email a copy. The body dolly was easy to build. Just remember the definition of an engine hoist-it's a machine designed to test the tensile strength of everything you forgot to disconnect! Good luck!

Major pain and several things to consider and plan for before you start the project.

My advice is not to remove the body from the frame unless you absolutely have to and only after you have explored every other alternative.
