First price....7,900! I laughed/coughed when this was stated. But he just said they need documentation on what's been done and pictures of the car previously (because they can't make out what it might have looked like.
And while I know I could buy another one for that .....to put it back in the condition that it was in would cost a whole lot more. Time to start faxing documentation ....
You should be able to get a "Stated Value" policy even though it's a DD. I did before I switched over to Haggerty (since I wasn't really using my car for a DD).
Allstate is one of the WORST insurance companys to deal with. they are really out to SCREW the customer ANY way they can when it comes time to pay a claim.. My Uncle's shop has about a dozen adjusters bared from his shop. they just want to cut any corner they can.
How much did you pay for the car? As I recall, you only owned it for a couple of weeks. I think you should expect what you paid plus incidentals. No more. No less. Did you expect to make a profit?

None of that matters. What matters is how much it will cost to replace the car. The insurance company doesn't care if someone gave him the car or if he over paid tremendously. They will only offer him what they think the car is worth and if he can prove it is worth more, they most likely will up their offer.
The main issue here is who was at fault. Sorry if I missed that part. If it wasn't your fault, you are in the drivers seat! This happened to me years ago. I restored my late grandmother's '78 Pontiac Phoenix and showed it at Daytona. It was totaled months later - NOT my fault.(that's another sad story) Progessive offered me book price - $800. I showed them pix of my car at Daytona along with prices for other "show cars". I settled for $5,500.
My point is - can you come up with proof the car is worth much more than their offer??

If it's a DD, look for an independent insurance agent in your area. They will search through the companies that they deal with every day and find someone who will cover you the way you want. Don't go directly to the big guys like Allstate, etc.

My first car (not a Corvette) was totaled three months after I bought (engine fire). It was a used car, but highly optioned and in exceptional condition, so I bought it from a dealer for about 30% higher than average book value for the make/model/age. As expected, the insurance agency came back with an initial adjustment of average book value. I provided documentation for everything I paid, even included the salesman's name and phone number, to the insurance agent. Due to the thorough documentation, and the recent purchase history, I got back every dollar I paid.
Hopefully you will have a similar outcome. I encourage you to be persistent, and as you stated, start faxing documentation. Good luck!
Contact a "Public Adjuster". They work on your behalf for insurance claims whether your insur co or someone elses.
You would be amazed at the difference in settlements.
Typically they charge 20%.

We are going through it on who was at fault....but I am fully covered. I know what was done to the car...hence the reason I bought it. The previous owner made a statement on my last thread about the quality of the car.....any way....they just asked for documentation ...and they will get it...and we will see what happens.

Sure it makes sense. At best, insurance pays fair market value. The appraiser will look at comparables to determine the value of your car. What better comparable than what you paid two weeks earlier?
Kind of laughed at your comment about "The previous owner made a statement on my last thread about the quality of the car." Then why didn't he sell the car for more? Your offer was the best deal he could get. Nothing personal. Just keeping it real.

Below is an album before, as you put it, "all that was done" with your car. Looks like you bought a repaired "totaled" car. Does your car have a salvaged title? Did you see the "before" photos before you bought your car?
Your car is an 81 so accidents plus being totaled will appear on your CarFax. Did you pull a CarFax before you bought your car?

Exactly! By fully documenting what you recently paid, you received "every dollar back." Not an additional amount based on some self-inflated value of your car.
