If it is that big of a problem you can always modify the seat frame for another inch or so.
I am 6'7'' weigh 180 pounds and wear size 14 shoes. I drive a 1969 coupe with a 4 speed, no power options. I can fit with the t-tops on or off of course, granted the driver's seat leans back a few more inches then the passenger side. Sure my knees were close to the dash, I didn't care, it's a blast to drive. Oh yeah I drove this car as a daily driver for 4 years. Only thing that bothered me was that the car got 16 mpg.

Cool. I loved my '74. Hated the <10 mpg around town, and the 14mpg on the highway. But it sure was fun!
