I keep mine in the passenger side footwell, just in front of the seat. Easy to grab in an emergency, and since it's so far rearward in the footwell, I've never had anyone complain about it interfering with their legs.
Remember, it may not be you that grabs that thing to put out your fire. You want it to be visible. I could not afford one of those trick chrome extinguishers.

I fabricated mine from 1/8" x 1" aluminum bar stock. It is attachd on top of the seat frame tracks. I plan on painting it dark brown in the next few weeks. The latch is tight but easily opens when pulled.

I think I understand what you're asking. It's not that Vettes are a high fire hazard. Old cars are, well... old. It's just smart to protect yourself and if you go to shows, you are protecting others around you as well.
Some of the high end show require all entrants to have an extinguisher in their car. Watching any car burn is horrible, especially one you have worked hard on to make it something you are proud of.

Vettes don't have a greater risk of catching fire than other classic cars, but fiberglass will burn, whereas metal won't. So vettes have this nasty tendency to burn hotter, quicker and more completely than other cars. Add that to the 20+ gallon gas tank and that's all the reason I need to carry an extinguisher.
A dry chemical fire extinguisher is better than none at all. But the Halotron type clean fire extinguisher leaves no white or pink powder to clean up afterwards. Especially if you nip a small fire in the bud in the engine compartment or interior. Wouldn't matter in the calamitous fire pictured above.
What you have shown relates to the fact that fuel pump area from the gas tank is fed by gravity. There is no check valve/shutoff as with a fuel injection system with electric pump. If the rubber "S" holes at the pump are compromised then gallons of fuel can feed the fire. That looks to be the case in that pic. Whe things get to that point a 2.5lb extinguisher is of no use. But it can help to prevent a small carb fire from progressing further. Halotron is also useful for under dash wiring mishaps.
