I was wondering if anyone knew a site or place that had a copy of original documeents that would have came with the car? I know that might be far fetch but something like the protect-o-plate, trim tag, factory build sheet...something like that. I found two sites that does it for 1953 - 1972 http://www.oldchevydocumentation.com/ and
1981 - 2004 http://www.corvettemuseum.org/
But I cant find anything for a 1972 - 1980. I have a 1978 if that helps.
No build sheet, no plate, nothing else. Open your door and below the vin you will see a trim tag. Top line tells you the month and day the tag was attached to the body, and the other codes tell you the exterior color and interior color code. Look up the code and it will tell you cloth or leather.

No. There is no location which would have original documentation for your car other than possibly the previous owners.
Everything you mention can be reproduced with information you must provide, but reproduction documentation serves no purpose.
As Karol posted, the Allied-Vaughn folks might be able to provide a copy of the original dealer invoice for your car. This document would be a copy made from original records on microfiche. It's nice to have if they have your VIN on record.
Assembly Instruction Manuals (AIMs) have a page outlining all the items which shipped with the car and where they were to be placed at the time the car left the assembly plant.
