I've got a 75' Vette and my hood doesn't sit right, it sits higher on one side than the other, anyone know if this is a common issue or if/how it can be fixed?
There's rubber bumpers or stops at the back of the hood that adjust the height of where it's at when it comes down. You may also have to check the hood latches themselves. The male part on the bottom is adjustable. Compare the low side hood latch to the high side hood latch and see if there's any differences in height.
On the hood latch, you want to be careful how you adjust it, because if it's too 'tight' the hood won't close or will pop open.

Define "higher." Does it sit higher than the fender?
No neither side is above the fender but one side (driver's side) sits lower than the passenger side, its' not flush at all. I would say it's about 3/4 lower than the passenger side.
Good. Use the blocks F22 mentions. Placement in the rain gutters is 100% trial and error. Keep moving them around until you get the fit you want. You may also have to shave them a tad if they happen to raise the hood too high.
There are also little black rubber bumpers that are mounted in the rain trough so you can adjust mid-points of the hood. You can shave them to any height you need. Location does not matter, use wherever they are needed. See one in the bottom left-hand corner of this pic:
