I currently work for a guy who develops accessories for C3 Corvettes. He has a 1970 C3 that we currently use to base all our dimensions off of.
Are there any resources out there where I can find all types of dimensions on a C3 (interior/exterior)? Are there CAD drawings available or are there any manuals that contain a lot of dimensions of the car?

Try reaching on the forum for people to borrow vehicles from. I do this to test new product on specific applications I need or vehicles to use for building FI calibrations.
There are probably no factory CAD drawings for C3s. I worked for a company in the late 70's - early 80's that supplied CAD systems to Cadillac but I never heard of any other GM division using the system. The factory assembly manual has detailed measurements for the frame (the frames changed a bit starting in 74) and I think (could be wrong) that the birdcage dimensions stayed the same for the entire C3 run. Interior details vary a lot - dash, console and seat changes happened at different times during the run. The bodies changed also to keep up with crash regulations.
Finding representative cars for whatever product you are working on as test mules is the best way to go. Try to find either original cars or ones that have been accurately restored.
