It seems the previous owner must have had something sitting on the hood for a long time. The hood seems to be to high it the front and back but sitting low in the middle. I'm guess the hood has changed shape from its original form.
Question
Should I try to set something under it to try to get it to bend back or should I be looking for a new hood?

It's a 72 with the factory hood and I like the factory hood and would not go to a hood with a different look.
It only about a 1/4" - 1/2" up in the front and it rear, the corners are flush but the center it about 1/4"- 1/2" high.

Later years have adjustment blocks used in the rain gutters to raise the sides of the hood to the level of the fenders. Try some of these. Placement and the height you need will be 100% trial and error.
My '80 has the same problem, the hood fits okay all around except it seems lower in the front middle.
Unfortunately in my case the steel nose support bracket in the front of the nose separated from the body (riveted/glued to the underside of the nose just in front of the hood opening), a very common problem. You can see the rivets in the top side showing through, a tell-tale sign.
So it is not the hood that went down, but the front that has bulged up.
Open the hood en feel underneath the front to the steel bracket. You can feel and see it if it has separated. Quite a lot of threads about this problem.
