I believe you will need the backspacing dimensions, 4.5" I think.

First, you state you want 17x8 and 17x7's rims and then you want "255/60/r15" tires.
typo? I have Foose Legends, 18x8's 4.0" BS and 245/45/18 front 255/45/18 rear. No rubbing and did not have to move the e-brake cable. You might have to with 17's, not sure.

17s or 18s will fit with no problem. The overall height, width, and backspace are what determines what fits not rim diameter.
8" wide wheels with 4" backspace fit with no issues. Don't go backwards by using 7" wheels in the front. Decide if you want 17s or 18s and whether or not you want to be able to rotate the tires. Then we can make specific suggestions.

Why the different tire heights on the Foose 18"? Does't that prevent a complete tire rotation?

It is hard to tell in the picture, but the rears are a little taller and wider than the fronts. I like the looks and I don't care about rotating them. If it was a DD than it would I would have gone with the same size.

Okay I,m going to stick with 17x8 all the way around. I need to go with 60s on all 4 corners due to the horrible roads in northeast pa.

a 255 17'' tire with a 60 side wall is going to be 29'' tall. you'll look like a monster truck if the tires even turn in the wheel wells.

you'll want to run a 255/50R17 to keep the stock height which is 27''

255/50-17s are your best option.
