I found some old headers on Craigslist near me. I drive a stock 77 that I wanna build up some. They're off a 68 camaro small block, Z code double hump (that last part means nothing to me). http://springfield.craigslist.org/pts/4509550566.html
Is that a good/smart change, or would it even work?

Probably 327 heads and if I'm not wrong, they don't come with accessory holes, that the 350 heads have. If they're for a 350 and have the holes you're good to go. If you can get the casting numbers (on the inside of the head casting), you can look it up and find out more.

But, very likely they will not have hardened seats that you should have with today's unleaded gas. Modern after market heads are so good it's generally not messing with old heads.

I bought a set of 350 heads , "461" heads that had the camel hump casting. They did not have accessory holes. Although I had them machined into them.
